最近两年圣诞节都是送亲手做的cookies给Jacob的老师教练们。通常我都会弄比较简单容易做的。这个lemon cookies是里面最简单的。因为是用盒装的cake mix做的。不过很意外的是很多人都很喜欢,有不少人跟我要食谱。我们家倒没有人喜欢吃。可能比较适合洋人的口味吧。酸酸甜甜,里面象蛋糕,外面脆脆的。<br />

把以上3种材料放入大盆里搅拌均匀。舀出一大勺搓成圆球,放入糖分里裹上一层糖分,放在烤盘上。<br />

这四川担担面是我们邻居家的叔叔教我做的.喜欢辣的朋友肯定会喜欢,我们家的小朋友也很喜欢,不过每一次吃都得配一大杯的水,哈哈..<br />

面条是鸡蛋面,我有kitchenAid的面条配套,所以做起来还是算不太麻烦.做面条的材料有鸡蛋,面粉,盐及水. 如果要面条Q一点,可以放一点的baking soda,我一般都没放.<br />
<br />
肉馅不用先调味,加一点姜末放进不粘锅中火炒,不用放油, 炒到肉末干干的,水分都蒸发,再加一点酱油及糖调味就可以装起来了.<br />
<br />
把炒好的肉末放在一个大碗, 把切好的姜葱蒜加进来,我们喜欢加很多很多.蒜最好是用磨出来的蒜泥.姜和葱可以切成末.再加上调味.<br />
<br />
调味有老干妈辣椒, 花椒粉,辣椒粉 (花椒粉及辣椒粉可以用热油浇在上面,味道会更好), 酱油, 香醋,糖.<br />
<br />
让肉末及调味放至少半个小时,再把肉馅拌入面条就可以吃了!<br />

炒粿条是我们家老公的最爱,每次回马来西亚最想吃的东西不是nasi lemak 就是炒粿条。在这里是买不到炒粿条的,所以想吃就必须自己炒。<br />
<br />
炒粿条最重要是火要大,也要炒得快,材料必须要准备好。这样的炒粿条比较好吃。不能贪心,一定要一盘一盘的炒。<br />

我只是简单的材料及做法放上来。<br />

做法:<br />
<br />
1. 烧热油爆香蒜蓉,加入虾仁和腊肠炒匀,再加辣椒糊炒香。 *辣椒糊:把辣椒干泡水后搅碎成糊*<br />
<br />
2. 加入粿条和调味料炒匀。 *调味料:(水,糖,盐,蚝油,酱油,黑酱油,鱼露及胡椒粉)混合一起*<br />
<br />
p/s: 调味料混合一起是因为炒粿条就是要火大,要炒得快。<br />
<br />
3. 然后把粿条拨去一旁,加入一大匙油烧热,打入鸡蛋炒散。<br />

1. 先把材料A的蛋黄,油及糖搅拌,加入盐,水,面粉及发粉搅拌成糊状。<br />

2. 蛋白加塔塔粉用高速度打至发泡,慢慢加入糖,打至硬。<br />

3. 把打硬的蛋白先舀一点加入A料,顺着同一方向搅均,再加入剩下的蛋白搅匀便可。<br />

4. 倒入空中烤模烤盘,放入已经预热烤箱,用175C (350F) 烤40分钟。<br />

<span style="font-size: small;"><span style="font-family: Arial,Helvetica,sans-serif;">做法~(柠檬酱):<br />1)除了(B)牛油外,把(A)全部材料倒入小锅里混合,用双烤盘热水上搅煮至松发,然后将它过滤后。<br />2)小锅再放回双烤盘热水上,加入(B)续搅煮至浓稠。<br />3)离火,待冷却备用。<br />4)盖上保鲜纸。<br /><br />蛋糕组合:<br />1)把一片蛋糕体放在底部,抹上一些柠檬醤在蛋糕片上,再铺上一层打起植物鲜奶油。<br />2)再盖上第二片蛋糕体,再將柠檬醤搽在蛋糕片上,再铺上一层打起植物鲜奶油。<br />2)重复第三片蛋糕体叠完。<br />3)最后再用表面装饰的鲜奶油装饰。 </span></span><br />

很多时候我们去吃韩国餐的时候,特别期待那一小碟不同的韩国小菜。我们家宝贝特别爱吃马铃薯,看到米桶家有这一道食谱,就跟着做了。<br />

<strong>韩国马铃薯小菜</strong><br /><br />

3 个中型马铃薯<br />
蒜末 2大匙<br /><br />
调味料:<br />
<br />
酱油 2大匙<br />
糖稀 (玉米糖漿) 1大匙,可用味醂,或白糖替代 (我用corn syrup)<br />
白糖 1大匙<br />
清水 100ml<br />
芝麻油 1小匙<br />
炒香的白芝麻.....適量<br />
<br />
<br />
<strong>做法:</strong><br />
1.將马铃薯去皮,切成1.5公分的方塊,再泡入清水中,洗去表面的淀粉,再捞起沥干水份,备用<br />
2.热油锅,爆香蒜末,放入马铃薯翻炒約2~3分钟<br />
3.加入酱油、糖稀、糖、清水,蓋上鍋蓋煮約8~10分鐘,中途可稍微翻拌數下<br />
4.再打開鍋蓋,轉大火收汁,等醬汁稍微收乾,試味,斟酌是否加糖或醬油調整味道<br />
5.最後 再加入芝麻油與白芝麻,拌炒均勻,即完成。<br />

我们家宝贝现在是pokemon的超级迷。 每天都抱着一堆的pokemon 卡。刚好我在网上看到了这还算简单的pokemon ball cookies,就做给他,让他开心一下:)<br />

饼干的材料:<br />
(我做两份,一份加了红色素,我的pokemon ball 颜色还不够红,太粉了)<br />
<br />
225g 牛油<br />
1杯糖(可以少一点)<br />
1颗蛋<br />
1茶匙Vanilla 香精 (可以不放)<br />
2.5杯面粉<br />
1茶匙盐<br />
<br />
做法:<br />
<br />
1)将牛油及糖打发,鸡蛋打散,慢慢的加入。<br />
2)加入vanilla(及红色素),最后加入面粉及盐打成团。<br />
3)把面团用保鲜纸包起来,整成一个圆柱子,放入冰箱冰一冰。<br />
4)把两个颜色的圆柱子团拿出来,切一半变成两个半圆柱子,把一个红色及白色放在一起,成为一个圆柱子,放进冰箱再冰一冰。<br />
5)把圆柱子团拿出来,切成大约1/4 inch 的厚度。再用圆形的模子把pokemon ball 印出来。<br />
6)375度烤12-14分钟.<br />
7)冷却后,用mini棉花糖剪一半,用icing黏在中间,再用黑色icing画棉花糖边及 白色红色之间的线。<br />

剩下的白色及红色团,我把面团杆成1/8 - 1/4英寸(inch),再用模型印出来,用375度烤12-14分钟。。儿子说粉色的要做给女生,所以我们就选hello Kitty 的模型。白色的我们就用star wars 的模型。<br />

这是我今年做最多的年饼吧。。一共做了五次了。这食谱看起来很简单,但必须要花比较多的时间来弄平。我也尝试用盒装的蛋白做,效果也一样。<br />

我一开始做就是把杏仁倒进面糊里,再把面糊摊平,但效果并没有太好,还是比较厚 (如下图)<br />

后来就只是把面糊摊平,再把杏仁片铺在上面。。这样的话,就可以弄得很薄了。。我一开始还一片一片的做,到最后我就把面糊摊开一大片,把杏仁片铺上。烤好凉透了,就用手掰开就行了。但如果要送人,还是一片一片的好看:)<br />

4个蛋白(大约33克一个)</div>

150g糖 (还可以再少一点)</div>

100g面粉</div>

200g杏仁片(我没量,我就只是把杏仁片铺满)</div>

50g 融化牛油</div>
<div>
(我加了一点黑芝麻,也可以加白芝麻或南瓜子)</div>

做法: </div>
<div>
1. 将蛋白及糖,搅拌至糖化。</div>
<div>
2.加入面粉拌匀,加入牛油拌匀。</div>
<div>
3.最后加入杏仁片拌匀。(我没有加入杏仁片,我是把混合体均匀的涂在硅胶垫上,再把杏仁片均匀的铺在上面,这样才会弄得比较薄)</div>
<div>
4. 把混合体均匀的涂在硅胶垫上(没有硅胶垫就用烘培纸),用汤匙的背面弄成薄片。</div>
<div>
5.预热烤箱,用350F烤15-18分钟(根据你的烤箱),大约13分钟就必须注意(烤太久就会烤焦),烤成金黄色就好了。</div>

木薯糕是我以前在马来西亚时非常喜欢的糕点。。木薯在东南亚是非常普遍的。。我以前做木薯糕都是买新鲜的木薯,去皮,刨碎再做,程序还是挺麻烦,而且很多时候买到的木薯也没有太好。。</div>

后来发现有冷冻木薯蓉之后,这木薯糕出现的频率就更频繁了。。我用的是<a href="http://blog.sina.com.cn/s/blog_67f589f40100jiau.html">盈盈的食谱</a>。 </div>

材料:<br /><br />2 lbs 的木薯蓉 (Shredded Cassava )<br />200g 椰糖 (palm sugar),我用过gulaMelaka 更香<br />
1/2 cup 浓椰浆 (coconut milk)我用罐头椰奶<br />3/4 cup水<br />2个蛋<br />2 tsp 牛油(butter)<br />1/4 tsp 盐 (salt)<br />2-3 滴的Vanilla香精 <br />1 tbsp 面粉 (all purpose flour)<br />1.5 tbsp 木薯粉tapioca starch or 粟粉 corn starch<br />
<br />
做法:<br />
<br />
1.解冻木薯蓉,在锅子里倒入水,加入椰糖,煮溶冷却备用。<br />
2. 把木薯蓉,椰奶,面粉,木薯粉,盐,vanilla 混合,然后倒入煮好的椰糖水,鸡蛋拌匀。不要下牛油。<br />
3.热烤箱至 360 F (大约175 C). 烤盘底下先铺一层油纸,方便取出。<br />
4. 把混合料倒入烤盘,放进烤箱烤一个小时。<br />
5. 一个小时后,把木薯糕取出,表面刷上牛油,然后把烤箱转为 Broil,再入烤箱烤成金黄色 (大约八-十分钟)就可以了。<br />
6.必须要等到冷却后,才可以切块。<br />
7. 我用的是9inch的方烤盘。<br />

材料:<br /><br />全蛋 1颗<br />蛋黄 5个<br />牛奶 70g<br />粟米油 45g<br />面粉 65g<br />pandan paste 1 茶匙 (也可用香草精)<br /><br />B.<br />蛋白 5粒<br />幼糖 70g<br />塔塔粉/醋/柠檬汁 1/4 茶匙 </div>

做法:<br /><br />1. 先把全蛋,蛋黄及油搅拌,加入牛奶,面粉及pandan paste搅拌成糊状。<br /><br />2. 蛋白加塔塔粉用高速度打至发泡,慢慢加入糖,打至<span style="font-size: medium;">起泡不跌</span>。<br /><br />3. 把打硬的蛋白先舀一点加入做法1,顺着同一方向搅均,再加入剩下的蛋白搅匀便可。<br /><br />4. 倒入八寸活动圆模,放入已经预热烤箱,用水浴法以350F烤约20分钟,再以300F烤约45分钟。<br /><br />5. 倒扣15分钟才取出蛋糕。蛋糕冷却后才切。</div>

久违了。。。 记得小时侯妈妈也有做过类似的蛋糕给我们吃。。妈妈用的是苏打饼,不过是一层一层烤的。。 我这是在其他博客看到的。。。有的用玛丽饼,有的用苏打饼,我用的则是消化饼,用消化饼的话,糖的量可以再减少。。<br />

材料:<br />牛油 250克(软化)<br />幼糖 150克 (我只用100g)<br />蛋 5粒<br />原味玛丽饼/苏打饼/消化饼 250克(打成粉状)<br />2 tbsp 可可粉<br /><br />做法:<br />1)将牛油和糖打至松发。<br />2)逐粒加入蛋搅拌均匀,再拌入饼粉,混匀成面糊。<br />3)把面糊分成3份,一份加入可可粉搅匀。<br />4)在烤盘周边及底部扫上一层牛油。<br />5)将一份原色的面糊倒入烤盆里。<br />6)放入已经蒸热的锅中,蒸15分钟,取出,用竹签在蛋糕上叉几个洞。<br />7)再铺上一份可可面糊,抹平,再蒸15分钟,取出。<br />8)最后将剩下的那一份原色面糊铺上,抹平,蒸15分钟。<br />9)取出来,稍微冷却后就可以切片。 <br />

我们家daycare有小朋友对鸡蛋过敏。。所以很多时候做的蛋糕她都不能吃,有时我也会弄一些没有鸡蛋的蛋糕/饼干/面包。<br />

这个也是为小朋友做的。。其实就是一般的rice crispy, 只是我把它压在muffin cup里,挤了一点icing,再放上fondant的小花及m&m 巧克力。。有时很简单的东西,只要花一点心思,就会很不一样。。小朋友很特别的开心。<br />

这是老公今年的生日蛋糕。之前也有做过<a href="http://doreenloo.blogspot.ca/2011/04/fam.html">这个蛋糕</a>,当时是芋头口味的。<br />

可丽饼:<br />
<br />
面粉 300克,鸡蛋 6颗,牛奶 1000毫升,溶化牛油 90克<br /><br />
芒果奶油馅:<br />
<br />
打发鲜奶油 300克,芒果泥300克 (将芒果泥加入打发鲜奶油稍微搅拌就可以了)<br />
<br />
芒果夹馅: 2-3个芒果切薄片待用。 <br />

可丽饼做法:<br />
<br />
1. 鸡蛋用打蛋器搅拌均匀,加入牛奶和溶化牛油继续搅匀,加入面粉搅拌,过滤并盖上保鲜纸冷藏过夜。<br />
2. 隔天将面糊拿出来恢复室温, 取一6寸不粘平底锅烧热,搽少许牛油或粟米油,用勺子舀取面糊,以最快的速度轻轻摆动平底锅,让面糊可以薄薄地布满一个圈,用中小火慢慢煎再翻面,一片片煎至面糊完为止。(大约可以煎20张crepe)<br />

做法:<br />

将已放涼的可丽饼抹上一层芒果鲜奶油,再盖上一层可丽饼,每第三层放上奶油馅及芒果薄片。 继续重复以上抹酱及盖可丽饼重叠的动作至crepe用完。接着放入冰箱冷藏一夜后才切片享用。 <br />

外面的装饰,我还是一样的用芒果奶油馅。<br />

我以前也有弄过tiramisu ,但这一次想做一个简单又不用蛋的食谱。 在网上参考了几个食谱。。做了一个自己还比较满意的tiramisu。<br />

Ingredient: </h3>
2 cups whipping cream, chilled<br />1 pound mascarpone cheese, softened<br />1/2 cup sugar (还可以再少一点)<br />1 & 1/2 cups prepared strong coffee + <span class="amount">3 tbsp</span> <span class="name">coffee liquor such as kahlua</span> (for adult<br />1/2 teaspoon vanilla<br />16 ounces Savoiardi (ladyfingers)<br />Unsweetened cocoa powder, for dusting<br />

Instructions:</h3>
<ol class="instructions">
<li>In
a large mixing bowl, mix mascarpone cheese, vanilla extract and sugar with a spatula until well combined. Then fold in the
thickened cream until it is of a nice creamy consistency.</li>
<li>In
a shallow dish, mix espresso/instant coffee with 3 tbsp kahlua. Dip one
lady fingers biscuit (halfway lengthwise and quickly in the coffee
solution to prevent it from becoming soggy) in the coffee solution. Arranged dipped lady fingers biscuit to form one
layer of the cake.</li>
<li>In a container or wide & shallow
dish, spread a layer of cream mixture you prepared in step 1 over the
biscuits with the back of your spoon.</li>
<li>Dust a thin layer of cocoa powder using a fine sieve.</li>
<li>Repeat
steps 2 to 4 to form a second layer of cake. Cover and chill the
tiramisu cake for a few hours until set. </li>

这个饼干是马来西亚过农历新年时,很多家都有的cornflake cookies。 我的也是过年时做的。。我这次还试一试用了chocolate的cereal (cocoa pebbles)。 问儿子那个比较好吃,他说都好吃。。喜欢那cripy 的感觉。。<br />

这个食谱我已经用超过10年了。。也是我刚开始学习烘培的作品之一。 <br />

材料:<br />
120g 牛油<br />
80g 糖<br />
1颗蛋黄<br />
1/2tsp Vanilla<br />
120g 面粉<br />
30g 粟粉<br />
30g 牛奶粉<br />
适量的cornflakes<br />
<br />
做法:<br />
1。将牛油及糖搅打至松软,加入蛋黄,Vanilla打匀。<br />
2。拌入所有的粉类。<br />
3。用小汤匙挖成小圆球,滚上已经压碎的cornflakes,放在小纸杯中。<br />

做法:</div>

1. 先把半条的法国面包切一半,再对切,一共是四片。</div>

2. 把洋葱切碎。</div>

3. 把锅热了,放1tbsp的油先把洋葱末炒香。</div>

4. 取一个碗,把鸡蛋和辣tuna混合在一起,再加入炒香的洋葱末混合。(我没再加任何的调味,因为辣tuna罐头的味道已经够了)</div>

5. 把1tbsp的油放进热锅,把鸡蛋tuna混合体放进去,再把面包盖上去,煎至金黄色即可。(我喜欢再翻一次,让另外一边也煎的脆脆香香的) </div>

<li><span class="plaincharacterwrap break">In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.</span></li>

bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the
milk mixture into the flour mixture; beat until blended.</span></li>
<li><span class="plaincharacterwrap break">Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.</span></li>

我把hazelnut 换成 almond 了。<br />

材料只有四种: 面粉80克,杏仁粉50克,黄油50克,糖粉50克<br />
<br />
我用了costco的杏仁片,用烤箱烤了10分钟再用magic bullet搅碎。<br />
<br />
做法:<br />
<br />
1. 黄油放在室温软化后,将所有材料都混合在一起。<br />
2. 用橡皮刮刀翻拌均匀成面团。<br />
3. 取一小块面团,在案板上小心地搓成长条。<br />
4. 用刀切成方块糖大小的小面团。<br />
5. 把切好的小面团摆在烤盘上,每个小面团之间留出一定的空隙,再送入预热好180度的烤箱,烤8分钟左右,观察表面成为金黄色即可取出。<br />
